Masterclass: Ukrainian Syrniki Workshop in Haapsalu

Making syrniki (curd cheese pancakes) is a form of culinary therapy. The kitchen fills with the warm aroma of cottage cheese while people gather around a shared table. It is more than a recipe. It is a meeting of cultures.
Join us for a flavorful journey into the heart of Ukrainian cuisine, where we will learn how to prepare one of the most beloved Slavic breakfast dishes while sharing stories, traditions, and cultural experiences through food.
In Ukrainian tradition, syrniki are not just pan-fried pancakes. The perfect syrniki are tall, airy and soft inside. Achieving that balance is an art in itself. During this masterclass, we will reveal authentic tips and techniques:
- How to keep the flour content minimal so the pure cottage cheese flavor shines through
- What the so-called “glass technique” is and how it creates the iconic shape
- How to achieve a perfectly golden crust with a soft and tender center
This is a practical and welcoming workshop where every participant will prepare and taste authentic Ukrainian syrniki. Everyone is welcome, regardless of language or cultural background.

The event takes place within the framework of the project “Support for Integration and Adaptation in Haapsalu.” The project aims to provide effective integration and adaptation services for adult newcomers, people from diverse linguistic and cultural backgrounds, and returnees, strengthening social cohesion and mutual understanding.
